Vegetable fried rice


Ingredients

1/3 cup light oil
1/2 cup cooked green peas
2 lg eggs
1/3 cup frozen corn
1 cup scallions coarsely chopped
6 oz chicken breast chopped
3 cup rice cold cooked

6 oz cooked ham chopped
1/2 cup green pepper coarse chop
1/4 cup soy sauce
1/2 cup mushrooms coarse chopped
2 lg garlic cloves minced
1/2 cup broccoli small flowerette
1/2 tsp sugar

1/2 cup celery coarse chopped
salt and pepper to taste

How to prepare

Heat 1-tbsp oil in a small skillet. Break eggs into pan and cook, stirring until they are set. Salt and set aside while moist. Do not overcook. In another skillet heat oil and add scallions, stir until they are hot. Add rice and stir rapidly so that the rice will not stick to the skillet. Add the ham, chicken, green pepper, mushrooms, broccoli, celery, garlic, and sugar. W/a spatula toss rice mixture till vegetables are soft. Add more oil if rice is dry. While stirring, add soy sauce, peas, corn, and heat briefly. Add salt, pepper, and soy sauce; flavor to your taste. Break up the eggs into small pieces; stir into rice. Serve when ready. Serves 5
