Two cheese scalloped potatoes


3 lb russet potatoes
1 tsp paprika
1 medium onion, chopped
3/4 cup chopped red bell pepper
1/2 cup chopped fresh parsley
1 cup packed grated swiss cheese

1 cup packed grated sharp white cheddar cheese (about 4 ounces)
2 cups half and half

How to prepare

Butter 13×9″ baking dish. Add potatoes to large pot of boiling water. Boil until just tender, about 30 minutes. Drain. Cool. Peel and slice potatoes. Preheat oven to 350
