Tomato broth


Ingredients

2-3 smoked ham hocks
1 leek, white part only
2 yellow onions, quartered
4 carrots, peeled
4 celery stalks
3 garlic bulbs, cut in half
4 serrano chilies, chopped
3 tbsp canned ancho chili paste
10 tomatoes, cut in half
1/2 bunch fresh thyme
2 bay leaves
1 quart chicken stock
3 quarts water

How to prepare

Preheat oven to 350. Combine all ingredients in a roasting pan and place in the oven 3 hours. Remove from oven and strain. Cool in an ice bath, then freeze or refrigerate till ready to use.
