The algonquin’s famous pie


Crust 888
2 cups all purpose flour
1 tbsp sugar
1 tsp salt
1/2 cup (1 stick) unsalted butter, chilled and cut into small pieces
1/2 cup solid vegetable shortening

1/2 cup ice water

8 apples, peeled, cored and thinly sliced
1 tbsp grated lemon zest
2/3 cup sugar
1 tsp ground cinnamon

1/8 tsp freshly grated nutmeg
sugar and flour, for dusting the top of the pie

How to prepare

Make the crust: in a lg bowl, stir together the flour, sugar and salt. With a pastry blender or two forks, cut the butter and shortening into the flour mixture until it resembles small peas. Add the ice water, a little at a time, and mix as little as possible until the crust comes together into a rough ball. Remove from the bowl, divide into two balls, cover with plastic wrap, and refrigerate for 30 minutes. Preheat the oven to 450
