Thai cucumber salad


Ingredients

1/4 cup bermuda onion, sliced very thin
4 small tomatoes, small wedges
1 large cucumber, cut lengthwise, seeded and sliced thin
8 red thai chiles, sliced thin
1 tbsp chopped fresh dill

1 red bell pepper, sliced very thinly
2 heaping tbsp dried shrimp, chopped very finely
3 tbsp fresh lime juice
1 1/2 tbsp fish sauce
2 tbsp sugar
1 tbsp sesame oil

1/4 cup fresh cilantro, chopped (optional)
1/2 cup raw peanuts, toasted in peanut oil till browned

How to prepare

Throw all of this into a salad bowl, toss well, and serve. The longer you leave the salad sitting, the spicier the salad gets! Serves 4
