Tex-Mex Dip


3 med avocados
2 tbsp lemon juice
salt and pepper to taste
1 cup sour cream
1/2 cup mayonnaise
1 pkg taco seasoning mix
2- 10 1/2 oz plain or jalapeno flavored bean dip or regular refried beans
1 bunch chopped green onions
3 med tomatoes, chopped
2- 3 1/2 oz cans pitted black olives, chopped
1- 8 oz sharp Cheddar cheese (shredded)

How to prepare

Mash avocados; add lemon juice, salt and pepper. Combine sour cream, mayonnaise and taco seasoning in a separate bowl. Spread beans on lg , shallow serving platter. Top with avocado mix; layer with sour cream mix. Sprinkle with onions, tomatoes and olives. Cover with shredded cheese. Serve dip chilled, room temperature, or heated with tortilla chips. Serve with salsa on the side. (enough for a party)
Variations: add chopped green chiles, cooked ground beef or shredded, cooked chicken.
