teriyaki Crockpot


Ingredients

1/4 cup firmly packed light brown sugar
1/4 cup soy sauce
3 tbsp lemon or lime juice
3 tbsp water
1 clove garlic, pressed
1/4 tsp ground ginger
3 lb chicken, cut in pieces
3 tbsp cornstarch
1/4 cup cold water

How to prepare

Mix the first six ingredients well. Put the chicken pieces in the crockpot, skin side down, and pour the sauce mixture over them (it will not completely cover the chicken, but don’t worry about that). Cover the crockpot and cook the chicken 7-9 hours on low. When the chicken is done, remove it to a serving platter and keep it warm, and turn the crockpot control to high for about five minutes. Then mix the cornstarch and water and stir it gradually into the sauce in the crockpot. Stir it until it thickens, and then turn the crockpot off. Serve the chicken with rice and vegetables and with the sauce ladled over the chicken and rice.
