1-1/2 cups medium bulghur wheat
2 cups water or clear chicken broth
1 cup minced parsley, leaves only
2 ripe tomatoes, seeded and finely diced
1/4 cup drained cucumbers

4 scallions, thinly sliced
1/4 cup chopped fresh mint leaves
1/3-1/2 cup fresh lemon juice
1/4 cup olive oil
salt & black pepper to taste.

How to prepare

Put bulghur in small mixing bowl with water or broth, let stand at least 30 mins while you prepare other ingredients. Drain any excess liquid from wheat and put in large mixing bowl; toss with remaining ingredients until well mixed; adjust seasoning. 8 servings.
