Sweet Potato Souffle’


5 med size sweet potatoes
2 eggs, beaten
1/2 tsp salt
1 tsp lemon extract
1/4 cup raisins
cinnamon to taste
3 tbsp butter
1/4 cup sugar
1/4 cup light brown sugar
1 tsp vanilla extract
1/4 cup coconut, grated
miniature marshmallows

How to prepare

Cook, peel and mash the sweet potatoes. Add butter and eggs to the potatoes and beat until the mixture is light and fluffy. Add all remaining ingredients, saving a little of the coconut. Place in a buttered, 2 qt casserole dish and sprinkle with cinnamon. Bake at 350
