Summer pasta sauce


2 cups diced tomatoes (about 3 lg)
1/2 cup fresh corn kernels
1/2 cup diced english hothouse cucumber or pickling cucumber
1/2 cup sliced green onions
1/4 cup diced green bell pepper
1/4 cup plus 2 tbsp olive oil

1/4 cup chopped fresh cilantro
3 tbsp fresh lime juice
2 large garlic doves, minced
1 jalapeno chili, minced
1/2 tsp ground cumin

How to prepare

Combine all ingredients in large pot and simmer 2 hrs. Salt and pepper to taste. Serve over pasta makes about 4 cups
