4 cups flour
3 eggs
1/2 tsp salt

How to prepare

Sift flour. Make a well into the middle and pour in eggs, beaten up with the salt. Starting from the middle, mix eggs into the flour, gradually adding liquid until you have a very soft dough. Beat and knead the dough until it forms blisters. Place it onto a chopping board and scrape thin strips of dough straight into boiling salted water with the broad side of the knife. Only put enough dough to cover top of water. Let them swell up for 3 minutes, fish them out with a sieve, rinse in hot water and place them in a bowl. Repeat until all dough is used up. Heat butter in a lg frying pan…put noodles in pan, and let sit until the noodles are browned. Stir noodles and continue to brown them. When about 30% of the noodles are browned they are ready to be served. Serving size : 6
