Southern fried yellow squash slices


2 med yellow squash, unpeeled 1/4″ thick
1 cup buttermilk
1 cup yellow cornmeal
1 tsp salt
cayenne pepper to taste
oil for frying

How to prepare

Soak the squash slices in the buttermilk and salt for an hour. Place the slices on waxed paper which has been covered with the cornmeal and pepper mixed together. Coat both sides of the slices and fry in half an” of hot oil, turning once. Fry until golden brown, then drain excess fat off by putting the finished slices on paper towels before serving. 4 servings.
