Ingredients
1 lb chicken breasts, skinless & boneless
Salt
Pepper
3 tbsp chicken broth
2 lemons, juice only
2 tbsp white wine
2 tbsp butter
1 clove elephant garlic, minced fine
1 tbsp parsley, minced
How to prepare
Cut the chicken into 1 1/2″ cubes. Season lightly with salt and pepper. Spray a lg non-stick skillet with a liberal coating of cooking spray. Arrange the chicken cubes in a single layer. Brown over moderate heat (3-4 minutes per side). Transfer to a heated platter. Add all the remaining ingredients to the skillet. Cook, stirring, until the butter melts and the mixture combines. Spoon the pan juices over the chicken cubes. Serve. Yields 4 servings.
