1/4 cup bread crumbs
1/4 cup raisins
2 tbsp chopped parsley
2 tbsp chopped capers
2 tbsp pine nuts
3 cloves garlic, chopped

Butterfly the monkfish; combine the ingredients and spread the stuffing mix across the fish. Roll the fish around the stuffing, wrap tightly on foil, and bake for about 20 – 25 minutes at 350
