Ingredients
2 tbsp vegetable oil
1 lb asparagus, cut in 3/4″ pieces
2 red bell peppers, cut in 3/4″ pieces
1 1/2 lb med shrimp, peeled & cleaned
2 tbsp soy sauce
1 1/2 tsp sesame oil
4 cloves garlic, minced
Zest of 1 lemon
1 1/2 tsp fresh ginger, grated
1/4 tsp salt
1/4 tsp red pepper flakes
1 scallion, sliced
2 tbsp fresh coriander, chopped
How to prepare
Heat the vegetable oil in a large frying pan or wok over medium high heat. Add the asparagus and red pepper and cook. Stirring until almost tender, about 8 minutes. Add the shrimp and soy sauce and continue to cook until the shrimp turn pink. Add the sesame oil, garlic, lemon zest, ginger, salt and red pepper flakes. Cook until hot (2 to 3 mins). Serve with the scallions and coriander scattered over the top. Makes 4 servings
