Scotch Eggs


8 hard boiled eggs
1/4 tsp paprika
1 lb bulk pork sausage
1 beaten egg
1/2 cup fine dry bread crumbs

How to prepare

Cool and shell eggs. On a lightly floured board flatten sausage into an 8 X 9 inch square. Cut into 8 pieces. Mold each piece around each egg. Combine bread crumbs and paprika. Dip meat in slightly beaten egg, roll in crumb mixture. Place in shallow baking dish on a rack. Bake for 20 min in a 375
