Scampi style skillet chicken


1 lb chicken cutlets
salt & pepper
3 tbsp chicken broth
1 lemon, juice only
2 tbsp white wine
2 tbsp butter
3 cloves garlic, minced
2 tbsp fresh parsley, minced

How to prepare

Cut the chicken into 1 1/2″ cubes. Season lightly with salt and pepper. Spray a large non-stick skillet with cooking spray. Arrange the chicken cubes in a single layer. Brown over med heat (3-4 minutes per side). Transfer to a heated platter. Add the remaining ingredients to the skillet. Cook, stirring, until the butter melts and the mixture combines. Spoon over the chicken cubes. Serve. Yields 4 servings
