Salsa fresca


4 medium tomatoes
1 small onion, finely chopped
2 or 3 jalapeno peppers, fresh, stemmed and seeded
1/4 cup chopped cilantro
1 small clove garlic, minced
2 tbsp lime juice
ground black pepper

How to prepare

Cut tomatoes in half; remove seeds and coarsely chop. Combine the tomatoes, onion, jalapeno peppers, cilantro, garlic and lime juice in a medium bowl. Add salt and black pepper to taste. Cover and refrigerate for 1 hour up to 3 days for flavors to blend. Makes about 2 1/2 cups.
