Ingredients
1/4 cup peanut or safflower oil
1/3 medium onion, finely chopped
1/2 cup finely chopped celery
5 chiles serranos with seeds, minced
1 cup cooked, shredded crabmeat
3 tbsp finely chopped fresh cilantro
salt to taste
How to prepare
Heat the oil in a frying pan and cook the onion gently, without browning, until it is soft. Add the celery, chiles, and crabmeat and fry until they just begin to brown slightly. Lastly, add the cilantro and salt and cook for 1 minute more. Serve with hot tortillas. This is also a simple and delightful filling for tacos. Enough to fill 12 small tortillas
