Salmon with asparagus


The salmon:
6 salmon steaks
kosher salt
black pepper
olive oil
the compote:
2 tbsp unsalted butter
1 cup garlic, sliced thin
1 cup grated spanish onion
2 cups asparagus, peeled, blanched, cut to 1″ pieces
3 tbsp chopped chervil
3 tbsp chopped parsley
2 cups tomato broth (look up)

Grill salmon over coals till med rare (about 3-4 minutes per side). Saut
