6 heads garlic
1 tbsp olive oil
1 medium onion, sliced
1 carrot, chopped
1 rib celery, chopped
1 chile poblano or other mild fresh chile pepper

2 quarts fresh rich chicken stock
16 small toast rounds
8 eggs
