Ingredients
10 lg garlic cloves
1/4 cup red wine vinegar
1/2 tsp salt
1 cup olive oil
2 tsp dijon mustard
Freshly ground black pepper
How to prepare
Preheat oven to 350 f. In oven-proof dish, roast unpeeled cloves, tossed with 1 tsp of oil for 25 minutes (stirring occasionally) or until garlic is soft. Remove from oven and when cooled, squeeze cloves from peel. Chop finely, discarding any hard bits . In med bowl, whisk vinegar, mustard, garlic, salt and pepper. Gradually whisk in remaining oil. Put dressing in a container and shake until well mixed.
