Regal rosemary butter


2-3 cloves garlic, minced
3 tsp fresh rosemary leaves
1/2 tsp orange or lemon zest
1 tbsp white wine or orange juice 1/4 tsp dried red chile (optional)
salt and pepper to taste
1/4 lb unsalted butter, softened

How to prepare

Try a dab of this melted on steak, lamb chops, or veal. Also excellent with fish, chicken, and potatoes.
