2 tbsp butter
1 small onion, finely chopped
1 small green pepper, finely chopped
6 medium potatoes, peeled & diced
(4 oz.) Can pimientos, drained & cut into strips
Salt & pepper
How to prepare
Heat butter in small skillet. Add onion, green pepper and cook over medium heat until tender. Stir in pimiento. Set aside. In large skillet, heat 1/2″ oil. Add diced potatoes and fry until brown and tender, turning occasionally. Drain; season with salt and pepper. Add onion mixture; toss together over high heat for 2 minutes to heat through.
