Potato pancakes


3 large potatoes, peeled and grated
6 shallots, finely chopped
2 eggs, beaten
4 tbsp dried breadcrumbs
butter and oil
sour cream to serve
apple sauce

How to prepare

Squeeze moisture from grated potatoes. Combine in a bowl with shallots, eggs and breadcrmbs. In a heavy-based pan, melt equal amounts of butter and oil, about 1 tbsp of each at a time. Drop in spoonfuls of potato mixture, fry and flip over. Cook until golden both sides. Serve with apple sauce and sour cream.
