Ingredients
1/2 cup pearl barley
1 1/2 cup water or stock
pinch of salt and pepper
2 cup broccoli, lightly cooked
1 rib celery, finely chopped
1 small carrot, shredded
Vinaigrette 8888
2 tbsp chopped fresh basil
4 tbsp balsamic vinegar
1 tbsp olive oil
2 tbsp pommeray mustard or herb mustard
2 tbsp water
Salt and pepper to taste
How to prepare
Place pearl barley and water in a pot and bring to a boil. Reduce heat to medium and cook for about 45 minutes or until slightly soft. Rinse under cold water and drain. Blend barley with vegetables. Add vinaigrette to mixture and allow to marinate for 20 minutes before serving. Makes 4 servings. From the golden door spa.
