Peach salsa


2 cups peaches peeled, diced ripe
1/2 cup red onion diced
1/2 cup red pepper diced
1/2 tsp jalapeno or serrano chili finely minced
2 tsp olive oil
2 tbsp lime juice
1/2 tsp salt
1/2 tsp oregano, dried, leaves, crushed

How to prepare

Combine all ingredients. Let flavors mellow for 30 minutes and serve. Makes 3 cups. Serve with grilled or roasted chicken, beef or lamb.
