Ingredients
1/2 cup soy sauce
1/4 cup sherry or rice wine
2 tbsp dehydrated onion
2 cloves garlic, crushed
1 tbsp hot oil
1 tbsp sesame oil
1 tbsp grated ginger root
1 tbsp fermented black beans
How to prepare
Mix all ingredients in a zip-lock freezer bag shake well to mix. Add chicken pieces shake to coat all parts. Place in refrigerate to marinate for at least 4 hours, turning every hour. Remove chicken, saving the marinade for basting. Grill over medium hot coals basting as needed until done. Serve remaining marinade as additional dipping sauce. Coats 4-8 serving pieces.
