Nachos – southwestern style


3 tbsp olive or canola oil
1 cup red or yellow onions chopped
4 lg bell peppers (red, yellow and orange)
10 sm jalapeno peppers, seeded, chopped finely
2 cloves of garlic chopped finely
1/2 tsp crushed, red pepper flakes
2 cups corn niblets
3-4 tbsp chili powder
2 tbsp cumin
Black pepper to taste
Juice of 3 lg or 6 sm limes
16 oz solid cream cheese
8 oz monterey jack cheese
2 cups fresh tomatoes chopped finely
1/2 cup chopped cilantro
Tortilla chips, blue and yellow
