Marinated lamb kabobs


2 lb boneless leg of lamb
1 lemon
4 cloves garlic
2 cups plain yogurt
1/2 tsp coarse ground pepper
1/4 tsp ground coriander
8 small white onions
1 red pepper
1 green pepper
8 cherry tomatoes

How to prepare

Cut lamb into 1 1/2″ cubes. Squeeze 2 tbsp lemon juice from lemon. Mince garlic. Combine juice, garlic, yogurt, and coarse pepper. Reserve 1 cup of mixture and stir lamb cubes into remaining. Cover and refrigerate 6 hours or overnight. Stir cumin and coriander into reserved mixture. Cook onion in boiling water until tender, about 10 minutes. Cut peppers into 1 1/2″ pieces. Heat grill, thread meat and vegetables on 4 skewers. Cook 15 minutes, turning skewers several times. Served with the spiced yogurt. Makes 4 servings
