Marinated feta cheese


1/2 lb feta cheese or an un-ripened goat cheese 5
3″ sprigs each, marjoram, rosemary, oregano (2 tab. Of dry crushed)
3 cloves garlic, peeled
5-6 olives
1/2 cup olive oil

How to prepare

Cut feta into large chunks. If using goat cheese, cut into 1 1/2″ thick slices. Fit cheese compactly into a jar or crock, about 1 1/2 cup size. Add herbs, garlic, and olives. Fill jar with olive oil to cover cheese; cover jar and chill at least 5 days. Serve at room temperature. Can be stored in the refrigerator for up to 6 weeks.
