Margarita beef with orange salsa


1 1/2 lb beef, top round, 1″ thick
marinade 888
2/3 cup orange juice concentrate
1/2 cup tequila
1/3 cup lime juice, fresh
2 tbsp olive oil
2 tbsp ginger, fresh, chopped

2 garlic cloves, medium, crushed
1 tsp salt
1 tsp oregano
1/4 tsp cayenne
orange salsa 8888
2 oranges, peeled, cut in 1/2″ pieces
1 onion, red, small, chopped
1 jalapeno, seeded, finely chopped
1/4 cup cilantro, chopped
2 tbsp lime juice, fresh
2 tbsp olive oil
1/2 tsp salt
1/2 tsp oregano

How to prepare

1) combine marinade ingredients. Place steak in a plastic bag; add marinade, turning to coat. Close bag securely and marinate in refrigerator 4 hours or overnight. 2) combine salsa ingredients in a non-metallic bowl and refrigerate at least 1 hour. 3) remove steak from marinade and discard marinade. Grill steak on a hot grill for 5 minutes per side for rare to medium rare; slightly more for medium. Remove steak to carving board and let rest for 10 minutes. Carve steak crosswise into thin slices; arrange on a serving platter. Garnish wish cilantro sprigs and lime wedges. Serve with orange salsa.
