Mango Chutney (Jamaica)


4 cup under ripe mangoes, diced
1 cup raisins
1 cup dates,diced
4 oz green ginger,fine diced & crushed
1 tsp mustard seed
4 cup sugar
2 oz salt
2 cloves garlic, minced
2 hot peppers, minced
4 cup malt vinegar
1/2 lb onions, chopped

How to prepare

Cut up dried fruit and peppers, add to vinegar and allow to steep until the next day. Add sugar to diced mangoes, along with ginger, garlic, onions and other seasonings. Boil all ingredients together gently until chutney is thick and brown. Source:Caribbean Cookbook
