1 lb lean ground lamb
1/2 cup uncooked white rice, washed
6 med vine ripe tomatoes, peeled and chopped
6 med zucchini
1 cup onions, finely chopped
2 cups chicken broth
1/2 tsp ground allspice
salt & black pepper
How to prepare
1) clean zucchini, cut off ends and hollow out the zucchini using a spoon. Set aside in a bowl filled with salted water.
2) in a sauce pan, brown onions, then combine tomatoes, chicken broth. Add salt & pepper to taste. Bring to boil then reduce heat and simmer for 10 min.
