Jellied irish coffee


1 tbsp unflavored gelatin
4 tbsp sugar
2 cups water
1-1/2 tbsp instant coffee
sweetened whipped cream
3 oz irish whiskey

How to prepare

Soften the gelatin in 1/2 cup of water. Heat the rest of the water, add the instant coffee and sugar and the softened gelatin. Stir to dissolve the gelatin, add the whiskey and remove the pan from the fire. Pour into demitasse cups or small custard bowls and chill until firm. Just before serving, mask the top of the jelly with the whipped cream. For 6 servings
