Italian Meatballs


1 lb lean ground beef
1/2 lb lean ground pork
1 1/2 cups dry bread crumbs
2 cups grated romano, parmesan, or hard goat cheese
2 eggs
2 tbsp dry, crushed parsley
1 tbsp dry, crushed basil
garlic salt, black pepper to taste
a little milk – up to 3/4 cup

How to prepare

Mix all together. Add the milk to soften the mixture. It should be fairly soft and I always add the total amount. Roll into 2 oz balls – about the size of an ice cream scoop. Either pan fry in olive oil or broil until golden brown all around. Place in spaghetti sauce and cook on simmer for about 1 hour.
