Ingredients
1 cup all purpose flour
1/2 cup butter at room temp.
1/4 cup sifted icing sugar
1 cup granulated sugar
1/2 tsp baking powder
1/4 tsp salt
2 eggs
2 tbsp freshly squeezed lemon juice
1/4 cup shredded coconut, preferably unsweetened
icing sugar
How to prepare
Preheat oven to 350 F. Butter an 8″ square baking pan. In a sm bowl, stir flour with butter and icing sugar, using a spoon or a fork, press mixture into prepared baking pan building up 1/2 inch sides. Bake crust in center of preheated oven until set and golden around edges, about 20 mins. Remove from oven and set aside. Leave oven at 350. In a sm bowl, blend granulated sugar with baking powder and salt, using a fork. Beat in eggs, then add lemon juice. Beat vigorously with fork till fluffy, about 3 mins. Stir in coconut. Pour over crust. Bake in center of preheated oven until evenly browned and set about 20 to 25 mins. Cool in pan, cut into squares and dust with icing sugar. Makes 16 squares.
