Herbed new potatoes


2 lb red potatoes
1/4 cup olive oil
2 garlic cloves, crushed
1 tsp fresh dill, or 1/2 tsp dried
1/4 tsp pepper, red, flakes
1/8 tsp salt, kosher
1/8 tsp pepper to taste

3 tbsp parmesan or romano, grated

How to prepare

Combine the oil, garlic, dill, pepper flakes in bowl and allow to sit for 1 hour. Cut the potatoes into 1/2 – 3/4″ dice. Oil an appropriate sized oven proof baking dish and pour the potatoes in. Distribute the oil mixture over top and toss, making sure the potatoes are covered. Add salt and pepper then distribute the potato in a single layer in the dish. Add water to the baking dish until it comes about 1/3 up the side of the potatoes. Cover the whole with the cheese and bake at 400 degrees for 45 minutes. At the end of that time, turn on the broiler and broil potatoes for an additional 3 minutes.
