Green salsa


8 tomatillos, husked
1 clove garlic
1 shallot
1 chile serrano, seeded
1 tbsp chopped fresh cilantro
juice of 1 lime
salt to taste

Chicken stock if necessary

How to prepare

Place tomatillos in a large skillet over medium heat. Cook, shaking pan frequently, for 10 minutes or until skin starts to split. In a food processor fitted frequently, for 10 mins. Or till skin starts to split. In food processor fitted with metal blade, chop cooked tomatillos, garlic, shallot, serrano and cilantro very fine. Do not puree. Mix well and season to taste with lemon juice and salt. If salsa is too thick, thin with a bit of chicken stock. Makes 4 servings.
