Greek-style rice with spinach


1 1/2 tbsp olive oil
1 large onion, chopped
2 cloves garlic, minced
4 cups chopped clean fresh spinach
3 tbsp lemon juice
4 cups cooked long grain rice
1 to 2 tbsp minced fresh basil

Salt and pepper to taste
1/4 cup crumbled feta cheese

How to prepare

Optional garnish: sugar-snap peas that have been blanched in boiling water for 1 minute. Heat oil in a heavy skillet or wok. Add onion and garlic and cook on medium-high heat until onion is softened and transparent. Add spinach, lemon juice and rice; cook, stirring frequently, until spinach is limp and rice is thoroughly heated. Toss in basil. Add salt and pepper to taste. Yield: makes 4 servings.
