Greek prawns with feta & tomatoes


1/2 cup plus 3 tbsp olive oil
1 medium onion, finely chopped
1 lb tomatoes, peeled, seeded and chopped
4 tbsp chopped fresh parsley
1 large clove garlic, minced
pinch cayenne
Freshly ground pepper
1 lb uncooked large shrimp, peeled with tails intact
1/4 cup ouzo
4 oz feta cheese, crumbled

How to prepare

Heat 1/3 cup oil in a heavy medium saucepan over medium heat. Add onions and saut until golden brown, about 12 minutes. Add tomatoes, 3 tbsp parsley, garlic, and cayenne. Season with pepper. Bring to boil, reduce heat, cover and simmer until sauce thickens, stirring occasionally, about 20 minutes. Can be prepared one day ahead. Cover and refrigerate. Rewarm before continuing. Preheat oven to 400

  1. This looks like a good basic recipe, however, I believe there is something missing from the method… adding the prawns, feta and ouzo. One of the recipes I found actually called the ouzo “orzo” and instructed to “add the orzo and light with a match” which is where I started scratching my head! I think I will combine this recipe with that one and with that, make a truly delicious dinner!
