Ingredients
1 lb dried navy beans, soaked
1 yellow onion, roughly chopped
4 clove chopped garlic
1 jar 33 oz marinara sauce
1/4 lb feta cheese, washed, crumbled
1 tbsp oregano, dried
1 tsp salt
1 tsp ground pepper
How to prepare
Place drained, soaked beans in a large pot, add marinara sauce, onions, garlic, oregano, salt & pepper. Cook over medium to low heat, covered, for 2 hours, adding water in small amounts as needed. Add the feta and cook for an additional 1/2 hour.
Serve with green or greek salad with a vinegar dressing and sourdough bread or hot rolls for a great one pot dinner.
Hint: do not cook at too high a heat or for too long. The idea is to cook the beans, not to reduce them to mush. They still taste great, but tend to look more like mortar.
