Escalloped corn


1 small green pepper
1/2 onion, minced
1/2 cup milk
1 cup canned corn
1/2 cup dried bread crumbs
2-3 cup buttered cracker crumbs
1/4 tsp mustard
2 tbsp butter
2 tbsp flour
1/4 tsp paprika
1 egg yolk
1 tbsp butter
pinch cayenne
1 tsp salt

How to prepare

Cut peppers in half, lengthwise, remove seeds, then cut in strips and cut these strips in half, crosswise. Cook pepper, onion and butter 5 min., Stirring constantly, add flour mixed with seasonings and stir until blended, then pour on gradually while stirring, the milk. Bring to a boil and add corn, egg yolk and bread crumbs cooked with 1 tbsp butter until well brown. Turn into buttered baking dish, cover with buttered cracker crumbs and bake in hot oven until crumbs brown.
