Ingredients
3 lbs fresh peas ( 1 package frozen cooked and drained or 17 oz
canned.drained can be substituted for the 3 lbs peas).
2 tbsp chopped onion
2 tbsp margarine or butter
2 tbsp allpurpose flour
1/2 tsp curry powder
1/4 tsp salt
1/8 tsp ground pepper
1 1/2 cup milk
How to prepare
Wash and shell peas. Heat 1″ salted water (1/2 tsp salt to 1 cup water) to boiling. Add peas. Heat to boiling, reduce heat. Boil uncovered 5 min.. Cover and boil until tender. 37 min. longer. If desired add 1/2 tsp sugar and or lettuce leaf to boiling water for added flavor. Drain Cook and stir onion in margarine in 1 1/2 qt saucepan until tender. remove from heat. Stir in flour. Curry powder, salt and pepper. Cook over low heat, stirring constantly, until mixture is bubbly. remove from heat. Stir in milk. Heat to boiling,Stirring constantly. Boil and stir 1 min.. Gently stir in peas. Heat through. Serves 4
