Ingredients
2 cups flour
1 egg yolk
4 tbsp butter
1/3 cup sugar
3/4 cup currants
2 tbsp cold water
2 tsp baking powder
1 tsp salt
How to prepare
Preheat oven to 350f. Lightly coat a baking sheet with baking spray. Sift first 4 ingredients together, then cut butter into it until mixture is crumbly. Beat together milk & egg. Pour into dry ingredients. Stir well. Add the currants. Mix well.
Prepare a floured flat surface. Dough will be wet. Knead on prepared surface and pat the dough till @ 3/4″ thickness. Cut out scones with 21/2″ biscuit cutter (or a drinking glass rim) and place on baking sheet.
Beat yolk with cold water. Using pastry brush, glaze each scone. Bake 25-30 minutes. Serve hot or cold, with butter or clotted cream & jam.
