Corn soup cajun-style


Ingredients

1 tbsp quick-mixing flour
1/2 cup water
1 tbsp margarine
3 cups fresh corn, cut off the cob
1/2 cup finely chopped onions
2 med tomatoes, peeled, seeded, and chopped (about 1 cup)
2 cups skim milk
1 cup evaporated skim milk
1/4 tsp salt
1/4 tsp ground white pepper
1/8 tsp ground red pepper
3 tbsp finely chopped green onions

How to prepare

In a small bowl, dissolve the flour in the water; set aside. In a med saucepan over med heat melt the margarine. Add the corn, onion and tomatoes; cook for 15 minutes, stirring constantly. Add the skim milk and simmer for an additional 15 minutes. Add the evaporated skim milk, dissolved flour, salt, and the white and red peppers. Reduce the heat and simmer for 15 minutes, stirring often. Add the green onions, simmer for 5 minutes, and serve hot. Makes 3 servings
