Corn pudding – souffl


Ingredients

1 2/3 cups fresh or defrosted corn kennels
4 scallions white parts only, chopped
1 cup evaporated skim milk
3 large eggs separated
1 tbsp margarine melted
1 tbsp cornstarch
1/4 tsp salt (optional)

1/8 tsp cayenne pepper
1 med roasted red bell pepper, cut into thin strips.
Vegetable oil cooking spray
