Corn cakes with sweet pepper relish


Relish ——
2 tsp olive oil, extra virgin
1 med red bell pepper, minced
1 med green bell pepper, minced
2 garlic cloves peeled & minced
2 tbsp lime juice
1/4 tsp sugar
1/4 tsp salt
2 tsp cilantro, finely chopped
corn cakes ——
1 cup flour
1/2 cup yellow cornmeal
1 tsp sugar
3/4 tsp baking powder
1/2 tsp salt
1/2 tsp cumin; ground
1/2 cup milk
2 tbsp milk
2 eggs
3/4 tsp tabasco sauce
3 tbsp green chilies, chopped
1 cup corn kernels
1 tsp butter, sweet; cut into slivers
