Cold oriental noodle salad


3 tbsp vegetable oil
3 tbsp rice vinegar
1 1/2 tbsp low-sodium soy sauce
1 tbsp sesame oil
2 tsp minced peeled fresh ginger
2 garlic cloves, minced
1 tsp sugar
1/2 tsp chili oil or 1/4 tsp.
Dried crushed red pepper
2 green onions, thinly sliced
1 carrot, peeled, shredded
1/2 cucumber, peeled, seeded, chopped
1/4 cup chopped fresh cilantro

How to prepare

Whisk all ingredients to blend in large bowl. Refrigerate. Serve over oriental noodles makes about 1 1/2 cups
