Chicken stock


2 chicken carcasses
1 tbsp olive oil
2 onions, peeled and cut into lg dice
1 carrot, peeled and cut into lg dice
1 stalk celery, cut into lg dice
3 sprigs fresh thyme
3 sprigs fresh parsley
1 sm bay leaf
1 tsp black peppercorns
1 qt water to cover

How to prepare

Have butcher cut carcasses into sm pieces or use a cleaver to do so at home keep Refrigerated until used bring a lg sauce pot to med heat and add oil add Onions, carrots, and celery and saut
